To preserve prepared foods' texture before serving, the Cres Cor H-135-WSUA-11 insulated hot cabinet features AquaTemp™—a humidity system with a 3¹⁄₂-quart water pan that enables operators to adjust humidity levels to a maximum of 95 percent with the electromechanical humidity thermostat. To protect water from leaking from the pan into the front of the unit, an integral drip trough helps contain spills. Users can modify heat as high as 200 degrees Fahrenheit with a separate electromechanical thermostat to hold various dishes at an appropriate serving temperature. The thermostats and thermometer are built onto a slanted control panel that can be removed for maintenance or cleaning. Fiberglass insulation built into the doors, side walls, top, and back helps preserve programmed temperatures in cool ambient spaces and when pans are loaded and retrieved.

The Cres Cor H-135-WSUA-11 humidified holding cabinet's single compartment includes 11 sets of wire universal angles that can support various pan sizes including (11) 12-inch by 20-inch steam table pans. As holding needs change, the wire pan supports can be adjusted on 1¹⁄₂-inch centers. Dutch doors provide direct access to specific compartment sections, which helps reduce heat loss. Their magnetic latches are simple to open, and to reduce bacterial spread between standard cleanings, they're treated with an antimicrobial protection agent. Despite being a full-height, 25³⁄₄-inch-wide by 33¹⁄₂-inch-deep by 69³⁄₄-inch-high unit, it's simple to transport with its heavy-duty 5-inch swivel casters. These casters help maneuver corners, and two of them have brakes for added stabilization. For improved steering control, its side handles can be pulled or pushed, while their recessed design protects walls from damage as the unit is moved.
