Ideal for kitchens with limited space, the Cres Cor 1000-CH-SS-SPLIT-DE half-size cook and hold oven features a compact, mobile design that supports up to 120 pounds of meat. Its fully insulated stainless steel construction retains radiant heat for efficient slow cooking, while smooth coved interior corners simplify cleaning and prevent grease buildup. This oven is equipped with field-reversible insulated doors, featuring silicone gaskets and high-temperature ceramic magnetic latches to minimize heat loss during operation.
To ensure precise temperature control, the Cres Cor 1000-CH-SS-SPLIT-DE includes solid-state electronic controls with an LED digital display. The cook and hold cycles maintain temperatures between 140 and 325 degrees Fahrenheit for cooking and 140 to 200 degrees Fahrenheit for holding, reducing shrinkage by 15 to 20 percent. The oven accommodates (8) 18-in. x 26-in. pans on removable angle pan slides riveted on 3-in. centers and includes three stainless steel wire grids. Anti-microbial latches enhance food safety, while the external drip pan keeps surrounding floor space dry. For added flexibility, the unit is mounted on four 5-in. swivel casters, two with brakes.
