The Everest Refrigeration EDA1 dry aging and thawing cabinet has a self-contained refrigeration system mounted to the bottom of the unit to optimize interior space. This unit has a stainless steel exterior to withstand collision and corrosion damage. The interior offers 22 cubic feet of internal space and is equipped with four adjustable stainless steel shelves. The interior floor is made of stainless steel, while the interior walls are constructed of PFOA-free, ceramic-coated aluminum to diffuse infrared rays which enhance the metal maturation process. This unit utilizes eco-friendly R290 refrigerant and maintains a temperature holding range between 33 and 54 degrees Fahrenheit.

For precise temperature programming, the Everest Refrigeration EDA1 dry aging and thawing cabinet is endowed with intuitive digital controls and an LED display. The interior is accessed through a double-pane glass door, which has an aluminum frame with a matte finish. This door works with the LED interior bar lighting to provide a clear view of shelf items to enable staff to monitor the drying or thawing process. To provide maneuverability in a kitchen workspace, this unit sits atop four 5-uinch swivel casters which are supported by locks on the front set and two leg stabilizers.
