Because the Carter-Hoffmann M243S-2T countertop heated holding cabinet has separate drawer sections for pans, it can hold products at different temperatures without flavors transferring. It has eight sections, each one accommodating a third-size, 2¹⁄₂-inch-deep pan. Each cavity has its own time and temperature controls with digital displays, and menu items can be programmed in the cavities, with 25 settings available in each section. When the cooking cycle is done on the timers, audible alarms alert users to prevent food from being held too long.

This Carter-Hoffmann M243S-2T drawer warmer's pans have aluminum covers that lower onto the pans with gravity, holding in moisture and extending holding times. If the covers are not needed, they can be removed for cleaning or to accommodate foods that do not need moisture. Because of its stainless steel construction, the cabinet is heavy duty and corrosion resistant.
