The Carter-Hoffmann HP65 plate warmer holds 12³⁄₄-inch-diameter plates, keeping them warm and close to cooking stations for efficient plating. It can support 314 pounds of plates, and to resist bending or sagging under the weight, it has a welded construction. To sufficiently retain heat, its double-walled structure is insulated, holding warm air inside to maintain the set temperature level.

Incoloy-sheathed elements in the Carter-Hoffmann HP65 heated plate holder provide heat that is uniformly circulated with the convection system fans. The temperature comes set at 155 degrees Fahrenheit but is adjustable from 120 to 185 degrees Fahrenheit. Using a recessed switch, the system is straightforward to turn on and off, and an indicator light illuminates when the power is on. Oil accumulation is reduced by the grease filter, which can be removed and cleaned in the dishwasher.
