The Carter-Hoffmann HL9-14 three-quarter-height mobile heated cabinet can hold (28) 12-inch-by-20-inch pans or (14) 18-inch-by-26-inch trays on stainless steel slides. Temperatures in the cabinet range from 85 to 200 degrees Fahrenheit, and humidity levels are adjustable to low, medium, and high settings. It can reach 90-percent relative humidity regardless of the air temperatures. The dial controls are easy to use, and there are separate dials for the heat setting and humidity level.

A stainless steel heat duct moves heat around the cabinet, ensuring product is evenly heated for consistent results. To produce humidity in the cabinet, the Carter-Hoffmann HL9-14 humidified holding cabinet has a 3.8-quart water reservoir. It is made of strong polycarbonate, and it comes in clear amber for visibility – the user can see when the level is low and fill it to the capacity line. When water levels are too low, an indicator light illuminates on the control panel to notify the operator.
