Carter-Hoffmann HL4-8 1/2 Height Insulated Mobile Heated Cabinet w/ (8) Pan Capacity, 120v

Because of its half-height design, the Carter-Hoffmann HL4-8 hotLOGIX4 humidified heated holding cabinet can support 16 full-size steam table pans or eight full-size sheet pans. Fixed wire slides hold the pans in place with a 3-inch spacing between them. Foamed in the cabinet top and sides, insulation keeps heat and humidity inside the cabinet and around the stored product. The door is field reversible, and for viewing, it has a single-pane glass window.

This Carter-Hoffmann HL4-8 half-height holding cabinet can be used to proof baked goods or hold cooked food at warm temperatures. It has a heat and humidity system that consistently moves air in the cabinet for even temperatures and provides quick preheating and recovery times. Whether the unit is holding or proofing, it sends full power to all the heating and humidity elements. The humidity element is under the 2.5-quart water reservoir in the bottom of the cabinet, and heat and humidity are controlled separately with dial controls. Its internal temperature runs between 85 and 190 degrees Fahrenheit, while the humidity can be set on a level from 90 to 95 percent.
