The Carter-Hoffmann HL4-14 hotLOGIX4 insulated heated cabinet can be used as a holding cabinet with just heat or as a proofing cabinet with humidity. Whether the unit is in holding or proofing mode, it provides full power to the heat and humidity elements, which are controlled separately with analog dials. Its temperature can be set between 85 and 190 degrees Fahrenheit, and humidity is adjustable between 90 and 95 percent. To generate humidity, the water in the 2.5-quart-capacity reservoir is heated by an element underneath it. The heat duct and blower evenly distribute heat and humidity throughout the cabinet, providing quick preheat and recovery times.

Because of its three-quarter height, this Carter-Hoffmann HL4-14 humidified holding cabinet accommodates 14 full-size sheet pans or 28 full-size steam table pans, which are held in place on fixed wire slides with 3 inches of spacing between them. Insulation traps heat inside the unit, while the door can be reversed in the field to fit into different layouts. The door has a glass window so operators can monitor cooking cycles.
