Because the Carter-Hoffmann HL10-05 hotLOGIX humidified holding cabinet measures 28 inches wide by 33¹⁄₁₆ inches deep by 33¹⁄₂ inches high, it can be installed beneath a counter for kitchens with limited space. Made of stainless steel, the unit is mounted on 3-inch-diameter swivel casters, so it can be moved for servicing, maintenance, and cleaning. Its universal slides accommodate (10) 12-inch by 20-inch pans or (5) 18-inch by 26-inch pans, and the slides can be adjusted by 1¹⁄₂ inches to better organize the cabinet. Because it's a reach-in unit, operators have direct access to product by opening the door. The interior and door are made with 2-inch-thick high-density fiberglass to preserve temperatures when the door is opened for short periods of time.

Inside the Carter-Hoffmann HL10-05 holding cabinet, a top-mounted heater produces temperatures between 85 and 200 degrees Fahrenheit, while a heated water reservoir generates moisture to preserve food texture. For even results, a blower fan circulates hot, moist air within the cabinet to eliminate cold spots. Heat and humidity have separate digital controls to increase operational oversight, and the unit's digital readout provide display settings. This system also includes sensors that gauge water and temperature levels, while indicating lights alert the operators when levels drop so users can ensure foods are held in safe conditions.
