The primarily stainless steel construction of the Hoshizaki SR72B-30MD6 mega top prep table refrigerator resists corrosion throughout its interior and exterior front, sides, and removable covers. The unit's durable body and self-contained refrigeration system are built to withstand frequent use. The rear-located refrigeration system has an enamel-coated evaporator for initiating hot gas condensate removal, which activates a timed defrost that preserves its structure from ice damage. In addition, capillary tubing weaves through this unit's body, forcing hot air out with environmentally friendly R290 hydrocarbon refrigerant as the air distribution system ensures cool air reaches all crevices. Staff can unlock two of the four 6-inch casters to enable easy-to-push mobility should this unit need to be moved.

The Hoshizaki SR72B-30MD6 food prep table's upper half features two hinged, stainless steel covers designed to keep in cold temperatures and maintain food-safe environments for the 30 poly pans beneath it. These pans measure 4-inches deep, though the top rail can hold those with 6-inch-depths, and the included adapter bars keep food items from resting on the cold liner. A provided 72-inch-long polyethylene cutting board located below this housing is useful for preparing thick club sandwiches or chef salads. Staff can pick from ample backstock, sauces, and produce in the drawer space beneath to replenish dwindling cold bar ingredients. These six drawers have an 18-cubic-foot capacity, are made of stainless steel for smooth movement, and can comfortably fit pans between 4 and 6 inches in depth.
