Hoshizaki PR60B Description
The Hoshizaki PR60B pizza prep table is a two-section, reach-in unit that holds prepped ingredients at safe, cool temperatures while providing a convenient workspace. A 60-inch-wide by 19-inch-deep by 1⁄2-inch-thick white polyethylene cutting board is integrated on the front so staff can chop vegetables, fruits, leafy greens, and meats. Its top section also features a pan rail that accommodates the eight included third-size, 4-inch-deep polycarbonate food pans and pan dividers. During idle periods or non-business hours, the rail's stainless steel lid can cover the pans—because this lid is insulated, it minimizes energy consumption in warm ambient settings. Both refrigerated base sections feature two 211⁄2-inch-wide by 251⁄2-inch-deep epoxy-coated shelves that can be adjusted in 1⁄2-inch increments. Two solid, insulated doors grant direct access into the cabinet, and to ease product insertion and removal, the doors can be set to stay open.
This prep table measures 60 inches wide by 361⁄4 inches deep by 431⁄4 inches tall overall and is positioned on 6-inch casters. These smooth-rolling wheels ease transport, and two of the casters include brakes for stability. To withstand daily back-of-house food prep, the interior and exterior are made of stainless steel—a rugged, rust- and corrosion-resistant metal that can simply be wiped clean. The cabinet walls and doors are insulated with 2-inch-thick foamed-in-place polyurethane to minimize energy consumption in high ambient temperatures.
This Hoshizaki PR60B food prep station's highly efficient, self-contained refrigeration system is certified to NSF-7 temperatures in 100-degree ambient temperatures. By using R290 hydrocarbon refrigerant, it can produce and maintain temperatures from 16 to 36 degrees Fahrenheit in the rail and 28 to 40 degrees Fahrenheit in the cabinet. The dual-controller system and solid-state digital controls let operators adjust the rail and cabinet temperatures independently. To ensure the pans are cooled evenly, the pan rail is engineered with a ducted air distribution system that moves air from the back of the unit to the front. When the rail's lid is open, its temperature set point drops to ensure food remains cool; when the lid is closed, the temperature returns to the set point to reduce freezing risk.
