Vulcan 48S-2B36G Description
The Vulcan 48S-2B36G Endurance™ restaurant range is powered by natural gas and features 1-inch rear gas connections with a rear manifold and pressure regulator. To save space, money, and energy, this three-in-one unit is built with two open-top burners, a 36-inch-wide griddle, and a baker's depth oven. Its 48-inch-wide by 34-inch-deep by 58-inch-high body is made of durable, rust- and corrosion-resistant stainless steel that's fully MIG welded for additional rigidity. To reduce the chance of its structure wobbling as heavy contents are loaded onto the unit, its 6-inch-tall stainless steel legs can be lowered or raised to level the unit on irregular surfaces. For convenient storage, it features a high lift-off shelf positioned above the burners and range.
The two burners are powered by a single flashtube pilot system control to conserve gas consumption. Staff can simply adjust each burner's heat with the cool-to-the-touch burner knobs, and the burners' grates and aeration bowls enhance efficiency during sauteing, simmering, or boiling. While the front grate measures 12 inches by 121⁄2 inches, the rear grate measures 12 inches by 141⁄2 inches to support large cookware, such as stockpots or saucepans. On the range's right side, the griddle is encased with side splash guards and a backriser to protect nearby surfaces from hot pops of oil. Operators can set the surface temperature with the front-mounted controls, and its durable 3⁄4-inch-thick surface heats evenly and withstands repeating heating and cooling. For quick cleanup, the burners feature an extra-deep crumb tray, while the griddle is built with a front grease trough.
The Vulcan 48S-2B36G restaurant range's baker's-depth oven measures 263⁄8 inches wide by 27 inches deep by 14 inches tall to accommodate full-size pans front to back or side to side for flexibility. It includes two oven racks with two rack guide sets that provide four rack positions. Users can simply insert and retrieve pans with the heavy-duty hinged door that remains cool, even when the interior is hot. To provide durability and simplify cleaning, the oven's base and door panel are made of porcelain. As temperature requirements change, the oven's interior can be set from 250 to 500 degrees Fahrenheit.
