Because the Vollrath PC10XPCC perforated pizza pan is made of aluminum and treated with a clear, anodized film, its durability and seasoning capabilities are enhanced. It has a 10-inch diameter for producing small pizzas, and its unfinished, tapered edges help cut dough to size and provide room for it to rise during the baking process. While the 14-gauge aluminum is sturdy and heats evenly to provide pizzas with a uniform crust, washing this pan in a dishmachine will cause it to thin over time.
