To keep messes contained, the Vollrath 72109 Cayenne® drop-in hot food well is designed with a wide lip that catches moisture and drains it into the well. Its two cast aluminum heating elements provide efficient, even heating, while its capillary tube thermostat controls conserve energy by supplying power only when needed. To streamline end-of-day cleanup, this unit features a built-in drain.

The Vollrath 72109 drop-in warmer has an illuminated on/off switch and remote-mounted controls for straightforward operation. Its thermoset well is self-insulating and fiber reinforced, and its direct-contact heating system ensures the contents are heated quickly and consistently. This unit has a capacity of four third-size pans.
