Able to hold twice the amount of water that other countertop models can, the Vollrath 72090 Cayenne® Nitro™ power rethermalizer accommodates one full-size pan or equivalent smaller pans in adapter bars. In 90 minutes, this stainless steel unit is able to bring a pan of cold food from 40 to 165 degrees Fahrenheit without getting hot on the outside. The heavy-duty bulb and capillary thermostat prevent overheating, and the front-access dials enable quick temperature control. For best results, all foods should be held in covered pans and stirred frequently. Users should also watch the low-water light and add water to the well if needed.
