Because the Groen TDH-40C tilt kettle has a self-contained steam source, it does not require a hookup to an external boiler or steam generator. The hollow jacket—situated between the interior and exterior of the bottom two-thirds of the kettle body—holds water that, when heated, turns into steam that provides an even heat without scorching and hot spots. Cooking food in this unit takes less effort and cooking experience than cooking on a stockpot range.

Holding as much as 40 quarts (10 gallons), the kettle is perfect for cooking large batches of soup, stew, gravy, sauce, rice, or pasta. After the product is cooked, the user can empty it into a pan positioned below by tilting the kettle body using the hand lever that can be mounted on the left or right side of the unit, depending on the operator's preference. In a tilted position, the pouring lip in the rim directs food into the container without sloshing and dripping.

The control system is operated intuitively using a temperature control knob, with 10 temperature levels—ranging from 150 to 295 degrees Fahrenheit—for users to choose from. The thermostat of this Groen TDH-40C tabletop steam kettle controls the temperature, shutting off heat when the set level is met and turning it back on when the level drops.
