Great for buffets and other customer-facing applications, the Alto-Shaam CS-200/S hot carving shelf maintains a safe product temperature while cooks are preparing for plating. Heat radiates directly to the carving surface with infrared lamps, and users can control the heat intensity with a high/low toggle switch. Operators carve the meat on the cutting board—its recessed surface prevents drippings from getting on other surfaces—and a sneeze guard is included with the station to reduce the risk of airborne contamination in busy areas.
