Alto-Shaam 500-TH-DLX Description
The Alto-Shaam 500-TH-DLX cook-and-hold oven's interior measures 143⁄8 inches wide by 211⁄2 inches deep by 201⁄16 inches high, while its three wire shelves can hold five full-size pans or 10 half-size pans. For even results, its gentle, radiant Halo Heat® technology surrounds food with warm air. In order to preserve food texture, this system doesn't use fans, high-heat elements, or added humidity. To accommodate many types of product, it generates and maintains temperatures between 200 and 325 degrees Fahrenheit and holding temperatures between 85 and 205 degrees Fahrenheit. Its single-point probe gauges internal product temperature, so if it falls within the programmed range, the unit converts automatically from cook mode to hold mode.
To streamline operation, the Alto-Shaam 500-TH-DLX cook-and-hold oven's deluxe controls enable users to manipulate temperatures, program recipes, collect HACCP data, and manage the oven via remote, cloud-based software. These controls also include SureTemp™ heat recovery, which compensates for heat loss when the door is open for short periods of time. The cabinet's 181⁄16-inch-wide by 281⁄2-inch-deep by 335⁄8-inch-tall structure is waterless and ventless, meaning it doesn't require a water hookup or traditional kitchen hood to simplify installation. Fitted with 31⁄2-inch casters, this stainless steel unit can be moved for serving, maintenance, and cleaning as needed.
