The Dexter S138PCP Sani-Safe® fillet knife has an 8-inch blade made from stain-free, high-carbon steel called DEXSTEEL™. This wide blade is well suited for slicing fish and has flex points throughout its length to ensure it can maintain its shape. The blade is designed to maintain a sharp edge for a long time. This Sani-Safe fillet knife is built with a polypropylene handle that is textured to resist slipping during use.
