The Dexter 10 05301 steak/utility knife is the ideal utensil for cutting steak or slicing acidic fruits with rinds. A traditional look is provided by the walnut wood handle that is secured to the blade with brass compression rivets. Expanding and contracted with the wood, these rivets help create a tight fit. "I was very excited when my set of four knives arrived today. I plan to buy 2 more and the knife block. First impressions: Frighteningly sharp out of the box! But the knives do need some finishing work. the wood is not smooth and some top edges of the blades are rough but nothing a little sandpaper or steel wool won't fix. Are they worth the money? Not sure yet. Indeed they are mini chef knives and have a good weight for their size. Wish they were just a touch longer overall but can't wait to try them out on a hunk-O-Ribeye. Right now they have one coat of Frombys TO finish on them. Wishing for the best."

The wood handle is classic no-nonsense that doesn't have a knob at the end to tell my fingers where to go. It is balanced beautifully, and has a great edge.
