The Merco Savory MHG22SAB1N holding cabinet uses DuoHeat technology to minimize temperature fluctuations and ensure dishes heat evenly. While heat rises from the shelf's base, the top releases convected air. Circulating air extracts moisture to keep fried foods crispy for serving, while tray seals lock moisture in food pans—ideal for grilled and broiled items. To hold foods with varying temperature requirements, users can adjust the shelves' temperatures individually between 122 and 266 degrees Fahrenheit with the digital solid-state temperature controls. Operators can manage holding time with front-mount timer bars that are flush to minimize debris collection for simple cleaning.
