Because the Cleveland SEL40TR DuraPan™ tilt skillet has a 40-gallon capacity, it supports large batch cooking in schools, hospitals, and high-volume restaurants. This unit has a deep pan basin, griddle-like pan surface, and spring-assisted cover, so it can be used with any cooking method. Its stainless steel-clad cooking surface is durable and quick to wipe down, while coved corners in the pan prevent bacteria from growing and debris from getting stuck. To ensure recipe accuracy, the pan has liter and gallon markings that support ingredient measuring.

The adjustable thermostat on this Cleveland SEL40TR tilting braising pan can be set and adjusted between 100 and 425 degrees Fahrenheit. Its heating system operates efficiently, preheating the pan in 15 minutes, and it recovers temperatures quickly, bringing a cold, 40-gallon load to boiling in 60 minutes. When emptying the unit, a tilting mechanism enables operators to quickly and conveniently transfer cooked product to a separate container. A pour spout directs the food into a container, while the food strainer can be placed over the spout to separate liquids and solids.
