Cleveland PEM242 Description
The Cleveland PEM242 electric steamer has a built-in steam generator, so it does not need a boiler connection. When the generator is turned on, it automatically fills with water, and throughout each cook cycle, the control system maintains proper water levels. Between its two compartments, the unit holds 16 full-size, 21⁄2-inch-deep hotel pans. Operators can keep up with the cook time using the two 60-minute timers on the front, and to prevent heat damage, the system does not work unless enough water is in the generator. The compartments fill with steam and operate at a pressure of 5 PSI, so they get hotter than non-pressurized convection steamers. For user safety, a relief valve lowers the pressure if it gets too high, and a mechanical interlock keeps the doors closed tight.
This Cleveland PEM242 floor steamer is made of sturdy, rust-resistant stainless steel. Its aluminum compartment doors are strong, and their self-lubricating bushings ensure they open smoothly. Featuring adjustable hinge pins, the doors close firmly. The door gasket and slide racks are removable for cleaning, and for servicing, the internal components can be accessed through the cabinet base.
