This Cleveland MKET12T electric mixer steam kettle produces uniform heating results with its two-thirds steam jacket. Filled with treated water, the jacket doesn't have to be vented or refilled. Its bayonet-mounted agitator and scraper work in tandem with the jacket, mixing product to desired consistencies while distributing heat evenly to prevent cold spots. The agitator's speed adjusts between 0 and 210 rotations per minute, and the scraper's speed is programmable between 0 and 70 rotations per minute. When product is ready to simmer, solid-state temperature controls maintain temperatures within a single degree of the set level.
Safety mechanisms built into the Cleveland MKET12T countertop steam mixer kettle prevent high-speed starts and continuous mixing. For precision when adding ingredients, gallon markings are integrated on the scraper shaft. A manual-tilt mechanism helps streamline pouring from its large pouring lip, reducing the risk of overexertion from lifting the 12-gallon-capacity unit. This 28-inch-wide by 311⁄2-inch-deep by 413⁄4-inch-high structure is made of corrosion-resistant stainless steel, and the interior is lined with 316 stainless steel that defends against wear from acidic products.
