Cleveland KGT12T Description
Because water fills in the hollow space between the interior and exterior, the Cleveland KGT12T tilting kettle has a self-contained steam source called a jacket. This jacket wraps around the lower two-thirds of the kettle, so the steamer uses less power and water than a full-jacketed kettle without heating as evenly. When water is heated by burners, it boils and generates steam that expands in the jacket to cook food, as this cooking method requires less labor and equipment experience than a range.
For batch cooking, the Cleveland KGT12T steam-jacketed kettle has a 12-gallon capacity, and the unit tilts when operators move the hand lever, conveniently emptying food into a container. Preventing accidental movement, the kettle body self-locks into the tilt position, and to direct product into the pan below, a pour lip is integrated into the rim. It is rolled to prevent denting or bending, because if the rim were to dent, it could alter steam pressure.
