The Cleveland 24GMK6200 steam kettle with cabinet base helps schools, correctional facilities, and other large institutions prepare large quantities of food at once. Mounted on the cabinet base, its 6-gallon kettle is rust resistant, so operators can cook a wide variety of products, including acidic foods such as tomatoes. Its cabinet base provides front access to key components and hosts a sink on top for convenience. Staff members can wash vegetables in the sink or swivel the faucet to pour water directly into the kettle. For heavy use, the unit is constructed of stainless steel that resists dings, dents, and scratches.
Once switched on, water fills the generator, creating steam to cook food. A low-water cut-off ensures enough water is in the generator at all times, preventing heat damage. Natural gas is used to heat the water in the generator, and the resulting steam moves to the kettle's jacket, which heats up the interior and cooks the food. After cooking, staff members can pull the tilt handle and pour the food into containers for freezing or serving. The kettle shape reduces splatter, while the tall backsplash protects items near the unit from splashing.
