To produce steam, the Cleveland 22CET3.1 Steam Chef™ countertop steamer has a 1-gallon water reservoir in the bottom of its compartment. When the power switch is flipped on, the water automatically fills, and probes monitor the water level throughout each cook cycle. A cycle can be set to steam constantly or on a 60-minute timer, and because the SureCook load-compensating feature adjusts the cook time based on product volume, product cooks completely. When the timer runs out, this steamer automatically goes into standby mode, saving energy and keeping the steam generator warm for the next batch.

For safety, the Cleveland 22CET3.1 convection steamer has a door switch that turns off the steam generator, as well as a blower that activates when the door opens, preventing steam from flowing out and burning users. If the temperature gets too high, the system shuts off so internal components do not overheat. The heating element is surrounded by aluminum, which heats up evenly and helps block out water. Because the element does not need deliming, this design reduces required cleaning. A drain gets rid of condensate, and its 3-min. rinse cycle helps debris move down the drain. Made of heavy-duty stainless steel, this unit can withstand high-volume use. Its left-hinged door opens from the right and is attached with a long, sturdy hinge.
