The Paderno 12514-36 frying pan uses three layers to benefit from both stainless steel and aluminum. Stainless steel is durable, lowering the risk of dings and scrapes, while aluminum conducts heat quickly. Aluminum also helps take care of hot spots that often form when cooking with stainless steel. Curved frying pan edges enable employees to toss food, and the rim has a flared edge to encourage stray liquids to fall back into the pan. The pan works with most kinds of heat, including induction.
