Because the CookTek 661801 SinAqua™ drop-in hot food well uses induction heating, a safe and efficient alternative to traditional cooking, it does not need water to operate or require drains. When electricity flows through the copper coil, it creates a magnetic field above the heating surface, and if an induction-compatible pan is placed in the well, the metal in the pan will move rapidly to create the friction the food well cooks with. Automatic pan detection is built into the unit, meaning energy will instantly transmit to an induction-ready pan and will not heat when a pan is not in place. Accommodating a full-size, 12-inch by 20-inch hotel pan, the hot food well is 6 inches deep

With six sensors, this CookTek 661801 induction hot food well has three temperature settings and three controllers, while temperature can be placed on four standard settings or chosen from a programmed level on the controller. This unit has an LED display, and the lock feature prevents unauthorized setting changes. Made of aluminum, the housing is durable, and its polycarbonate interior surface facilitates cleaning.
