Ideal for compact holding and simple transport, the Winston HOV3-05UV half-height heated cabinet measures 27⁷⁄₁₀ inches wide by 34²³⁄₁₀₀ inches deep by 39⁴¹⁄₁₀₀ inches high and is fitted with 3-inch casters. This unit accommodates five 18-inch by 26-inch sheet pans, (10) 18-inch by 13-inch half sheet pans, or (10) 12-inch by 20-inch by 2¹⁄₂-inch hotel pans. Its insulated door provides direct access to the interior to ease pan insertion and retrieval, and to accommodate specific kitchen layouts, its hinge is field reversible. Made of durable stainless steel, the interior and exterior resist rust, corrosion, and wear and can simply be wiped clean as needed. For best results, this unit should be installed with a 2-inch clearance on each side and shouldn't be placed near heat-emitting units that could cause this cabinet to exceed a 200-degree-Fahrenheit surface temperature.

To hold prepared foods at safe serving temperatures, the Winston HOV3-05UV holding cabinet uses CVap® (Controlled Vapor) technology. By using moist vapor heat and dry air heat, this system can maintain the original quality and texture of proteins, vegetables, and baked goods. For precision, staff can adjust evaporator and air temperature in 1-degree-Fahrenheit increments. CVap uses a corresponding membrane control with calibration-free thermistors to gauge cabinet temperatures; once the water in the evaporator reaches the set temperature, the unit automatically raises the food temperature to the desired temperature. This unit requires manual water fill and features a low-water detection system to alert operators to required filling.
