Winston HBB0D2 Description
The Winston HBB0D2 CVap® hold and serve drawer maintains ideal food temperatures and textures prior to serving with controlled vapor technology—a mechanism that stabilizes the water vapor content with the food's water content, preventing foods from drying out prior to being served. Operators can adjust temperatures with separate electronic controls; food temperatures can be raised or lowered from 90 to 190 degrees Fahrenheit, and food texture can be managed with temperatures as high as 250 degrees Fahrenheit per drawer. For maintenance, users must manually fill the unit's spout with low-mineral potable water for best results.
Featuring a two-drawer layout, the Winston HBB0D2 hold and serve drawer is made of high-grade stainless steel that endures dents and scratches and resists corrosion. The unit's perimeter is fully insulated to protect surfaces from high temperatures, and it also helps minimize user injury risk. Each drawer accepts a full-size steam table pan, two half-size steam table pans, three third-size steam table pans, or a gastronorm pan, suiting it for low-volume applications. Also, each drawer has a 20-pound weight capacity. Overall, this freestanding unit measures 241/10 inches wide by 293/10 inches deep by 253/10 inches high.
