This electric unit has a single deck, and its overall dimensions are 30 inches in width by 25¹⁄₄ inches in depth by 30 inches in height. Made of heavy-duty stainless steel, the convection oven withstands rigorous use over long periods and is also simple to clean. Because it's constructed with a window, operators can view product throughout the cooking process. This unit is designed with five racks that can be adjusted to nine positions. Its porcelain interior evenly distributes heat to all products and is easier to clean than aluminum or steel.

Equipped with a solid-state digital time and temperature controls, the Duke 59-E3XX convection oven's temperature ranges from 200 to 500 degrees Fahrenheit. This unit can hold product for as long as 12 hours, and its cook-and-hold feature enables operators to switch the oven to holding mode—this keeps food at desired serving temperatures without continuously cooking it.
