To keep salad bar ingredients cool, the Delfield N8076-R drop-in cold pan is cooled with ice and insulated with polyurethane foam. Its perforated, removable false bottom reduces accumulation of unseemly liquid residue around displayed items, and a 1-inch plastic drain eases cleaning between uses. This curved, 73¹⁷⁄₂₅-inch-wide by 26¹⁄₂₀-inch-deep by 10⁷⁷⁄₁₀₀-inch-tall unit accommodates four 12-inch by 20-inch pans, and stainless steel holding clips and adapter bars secure them in place. For a sleek, cohesive appearance on buffet lines, it can be dropped into a cutout with a maximum width of 73⁶⁄₂₅ inches and depth of 25¹⁄₁₀ inches. While its 22-gauge stainless steel interior liner can simply be wiped clean between uses, its 24-gauge galvanized steel exterior provides strength to endure high-volume front-of-house use.
