The Delfield 4427N-6 sandwich prep table holds six sixth-size pans in the top opening. Since a lid closes over the opening, product contamination is prevented and cold air is retained. To ensure the pans fit in the opening, adapter bars are included. Dual level brackets can be added to the unit, lowering the pans an additional inch to improve holding temperature. Items can also be stored in the cabinet on the wire shelf. With its epoxy coating, the shelf resists corrosion.
The top opening stays between 33 and 42 degrees Fahrenheit, while the cabinet maintains temperatures ranging from 36 to 40 degrees Fahrenheit. An air screen keeps the product at cold temperatures without drying them out. Since the unit is front breathing, it can be placed against a wall, used in an existing equipment line up, or built into a cabinet.
