The modular front panel slides out for accessibility and features an LED display with Pulse Plus® and cook-and-hold options.

For low- and medium-volume applications, the Blodgett MARK V-100 SGL commercial convection oven's baking chamber accommodates five 18-inch by 26-inch full-size baking pans on its five removable chrome-plated racks. To achieve a specific result, users can reposition these racks in 1⁵⁄₈-inch increments—11 rack positions in total. Its two stainless steel doors operate dependently so users can open and close them with one hand, simplifying pan loading and retrieval. Dual-pane thermal glass windows grant an unobstructed view of the pans, while integrated halogen lights illuminate the interior so users can manage baking, roasting, or rethermalizing. For durability, this 38¹⁄₄-inch-wide by 40¹⁄₂-inch-deep by 57-inch-high piece has a stainless steel exterior and double-sided porcelainized baking compartment liner.
