The Blodgett BCX-14EDBL double full-size combi oven holds up to seven 18-inch-by-26-inch or (14) 12-inch-by-20-inch pans in each cavity. It comes with 10 heavy-duty, corrosion-resistant stainless steel racks. Visibility inside the cabinets is provided by halogen lights, enabling staff to monitor the cooking process through double-pane glass windows. To simplify the cleaning process, the interior liners have coved corners that eliminate crevices. There is also a drain in the bottom of the oven, so excess water drains out of the cavities. Heat is kept inside the cooking chambers since they are fully insulated.

With manual controls, the operator has the option for hot air, humidity, and cool down functions with an additional feature for steaming on demand. The thermostat on this Blodgett BCX-14EDBL double full-size combi oven can be adjusted up to 500 degrees Fahrenheit and, for even baking, there is a multiple speed, reversing fan. An open-vented system condenses steam and drains by-product to ensure flavor transfer between cook cycles is eliminated. There is a dual door latch to vent steam before the door is fully opened, and the user can release steam when necessary with a switch.
