The Doyon E336TLO proofing cabinet has a maximum relative humidity of 95 percent and temperature range of 90 to 110 degrees Fahrenheit, depending on the level set by the user. These conditions are balanced and evenly distributed by the heating system, and the electronic controller has a user-friendly countdown timer. Three double racks or six single racks fit in this unit. Its handles on the doors withstand heavy use, and visibility is provided by the glass doors and interior lights. Constructed of stainless steel with an aluminum floor, this proofer resists scratches, stains, and corrosion.
