The Doyon AB080XB hydraulic lift spiral mixer is perfect for blending dough for pizza, bagels, and breads. With its 175-quart capacity, the mixer holds 11 to 75 pounds of flour and 18 to 280 pounds of dough. The dough is kept cool to elongate yeast viability and allow gluten to develop fully. Mixing time varies from 3 to 10 minutes depending on the type of dough being mixed. To ensure operation is efficient and flexible for different products, the mixer operates at two speeds. The digital controls provide easy operation, and since nine programs can be stored in the mixer, results are consistent.
Constructed of stainless steel, the bowl resists corrosion and minor damage. The high center in the bowl eliminates the dough feeder post. For safety, operation is prevented when the bowl guard is open. The bowl guard is transparent so the operator can easily see product during the mixing process.
