To hold a wide food range at safe serving temperatures without degrading their textures or flavors, this Metro C599-SFS-L C5® 9 series heated holding cabinet generates adjustable heat and humidity. The top-mounted 6⁴/₅-inch touchscreen control enables operators to alter temperatures between 90 and 200 degrees Fahrenheit and manage humidity levels relative to produced heat. Operators can use this control system to set timers and program recipes, and to streamline operation, it alerts users when water or temperature levels drop unexpectedly, logs HACCP data, and prevents unauthorized employees from adjusting temperature and humidity. For consistent temperature and humidity levels, the heat and humidity systems feature tubular heating elements and ducted airflow that generates natural, gentle convective airflow.

The Metro C599-SFS-L holding and proofing cabinet's lip-load slides are positioned on 1¹/₂-inch centers and accommodate (35) 18-inch by 26-inch sheet pans. A solid full-length door grants users direct access to pans for smooth loading and retrieval. Because this cabinet is designed for transport, its full perimeter is insulated with 2¹/₂-inch high-density fiberglass to minimize temperature changes when it's not plugged into an outlet. Its 5-inch casters include brakes for stability, and operators can steer this 30-inch-wide by 36³/₈-inch-deep by 74³/₄-inch-high unit with its four polymer handles. Its rigid stainless steel construction withstands wear from collisions, while its polymer base bumper lessens impact.
