Metro C599-SDS-UPDC Description
The Metro C599-SDS-UPDC C5® 9 Series heated holding and proofing cabinet produces heat and humidity to keep prepared dishes warm without drying them out or sacrificing their original flavors. This unit generates gentle, natural convective air that circulates heat and moisture evenly for consistency. Operators can modify temperatures between 90 and 200 degrees Fahrenheit on the top-mounted touchscreen display, and humidity can be adjusted according to set cabinet temperatures. To streamline operational oversight, its control panel displays a precise temperature readout and enables users to set recipes, program timers, and initiate the auto-start feature. This system can also alert operators when temperature or water levels are low, log HACCP data, and prevent unauthorized employees from adjusting settings.
This full-height Metro C599-SDS-UPDC insulated heated cabinet's universal wire slides support (32) 12-inch by 20-inch by 21/2-inch-high steam pans or (17) 18-inch by 26-inch sheet pans, and as inventory changes, the slides can be adjusted in 11/2-inch increments. To minimize heat loss, two solid Dutch doors and two glass Dutch doors are built onto the front and rear so users can access a specific section. While the solid doors are insulated to preserve generated heat, the glass doors grant a direct view into the cabinet. This 30-inch-wide by 363/8-inch-deep by 743/4-inch-high stainless steel cabinet is mounted on 5-inch casters to simplify transport, and four built-in polymer steering handles enable controlled steering. During transport, high-density fiberglass insulation avoids temperature loss, while the stainless steel exterior and polymer bumper withstand impacts from collision.
