Metro C569-SFC-U Description
Universal wire slides built into the Metro C569-SFC-U C5™ 6 series heated holding cabinet's interior accommodate (18) 18-inch by 26-inch sheet pans or (34) 12-inch by 20-inch by 21/2-inch steam pans. Secured on stainless steel uprights, these slides can be raised or lowered in 11/2-inch increments. The double-pane tempered glass door provides direct access to the pans and a clear view into the cabinet. To withstand high-volume use plus resist rust and corrosion, the cabinet's interior is made of 22-gauge stainless steel, and the exterior has a polished, 20-gauge stainless steel construction. Overall, this unit measures 291/8 inches wide by 325/8 inches deep by 743/4 inches high and is fitted on 5-inch casters.
Operators can regulate the Metro C569-SFC-U holding cabinet's temperatures between 70 and 200 degrees Fahrenheit with the top-mounted temperature control knobs. An analog thermometer displays a constant temperature readout, even when the unit is turned off or unplugged. For rapid recovery, the ducted heating system circulates warm air evenly through the cabinet, suiting it for consecutive operation. To minimize temperature fluctuations, the cabinet's perimeter is insulated with 21/2-inch, high-density fiberglass, and an integral water pan system introduces passive humidity into the cabinet environment to preserve food texture.
