Oven proofer combination units offer both flexibility and functionality for your business. These unique ovens serve both as a cooking unit and proofing unit, allowing you to free up extra space where a separate version of these two pieces of equipment might be used. Types of Oven/Proofer Combos
Oven/proofer combination units can be divided into two types, full size or half size. Full sized units are larger, thus having more cooking/proofing capacities. Full sized units can be either gas or electric powered, offering flexibility in cooking styles.
Half size oven/proofer combos are slightly smaller, with less cooking/proofing capacities that the larger, full size versions. Half size units are perfect for any commercial kitchen where space is an issue. These units are electric powered and can be purchased with or without a staging cabinet.
Oven/Proofer Pan Capacity
Oven/proofer combination ovens have a variety of different pan capacities to choose from. You can choose a smaller unit for smaller businesses, while larger, higher volume businesses would need a combination oven with a greater capacity. These units can be purchased with pan holding capacities of 2-14 in the oven and 9-32 in the proofer.
Heating Methods of Oven/Proofer Combination Units
Oven/proofer combination units can be heated by two different methods, either gas or electric. Gas heated ovens offer a slightly quicker start time, which will result in faster cooking times. Gas heated units often have higher cooking temperatures.
Electric heated oven/proofer combos have slightly slower start up times, but offer a greater consistency in cooking temperature. Electric heated combination oven/proofers have a smaller risk of mechanical failure, which minimizes maintenance time.
