The Steel
What is VG10?The Rockwell scale is a means to measure the hardness of a material. VG10 stainless steel has a Rockwell hardness of 61. VG10 is steel made with a high carbon content to produce a “super steel” that maintains sharpness and durability without becoming brittle. This is why Shun utilizes VG10 steel, applying it in layers to provide flexibility and strength. They use the VG10 steel in their Shun Pro series, Shun classic series and the Shun Ken Onion series.
What is SG-2 Powdered SteelWouldn’t any chef love a knife made with no imperfections or weak points? Shun can provide it. The SG-2 powdered steel comprises Shun Elite series knives to help keep the edge as sharp as the day it was shipped.
Shun Says...“Imagine that steel is like fabric. Regular stainless steel would be like burlap. Strong but with lots of holes and hard to cut and sew. VG10 would be like denim. Much tighter weave easier to cut for sewing and a lot more durable. SG2 would be like fine silk. Super fine threads for maximum density, super flexible, easiest to cut and sew, and definitely the strongest fabric that will last the longest even though it is the thinnest.”
The Shun Edge
Shun’s edge is ground to a 16 degree angle, making it intensely sharper than the 22 degree angle typical in German cutlery. Combine Shun’s razor sharp edge with the strength of their steel and the blueprint for the perfect knife has been completed.
Shun even provides a lifetime warranty on their knives' edges. Shun knives must be specifically sharpened, and it is recommended that you send your Shun set once a year to be resharpened by the experts.
Shun Knife Making Methods
The Kasumi method of knife making is the true way samurai swords are made. Hard carbon steel is used for the edge and the “clad” with stainless steel. This method is used in lines like the and the Ken Onion series.
Honyaki MethodAs seen in the , the blade is made of one piece of steel. Shun states, “In Japan the most prized and expensive kitchen knives are made this way.”
