It's National Crab Newburg Day! If you've been looking for a hearty and delicious, yet simple, recipe for a wonderful seafood meal, then look no further. Courtesy of www.yummly.com, this Crab Newburg meal is sure to be a hit. And, if you make a little extra, this dish makes great leftovers!

Ingredients:
- 4 tbsps butter
- 1 shallot (minced)
- 14 cup red bell pepper (diced)
- 4 tbsps flour
- 1 cup chicken broth
- 14 cup dry sherry
- 1 cup sliced mushrooms
- 1 lb crabmeat
- 12 cup half and half
- 12 cup breadcrumb (fresh)
- 1 tbsp grated parmesan cheese
Directions:
In a large skillet, melt butter; sauté shallot and red pepper.
Add flour and stir until mixed; add broth and sherry.Simmer for 3 minutes.
Add mushrooms; simmer 5 minutes.
Add crab and half and half.Do not boil, but let this mixture heat through.

Spoon into 1 quart casserole dish.Sprinkle with breadcrumbs and Parmesan cheese.Place under broiler until breadcrumbs are light brown.
