Gordon Ramsay's Cookalong
It is finally that time of year for friends, family and of course great food. For a lot of us it is also one of the most chaotic and hectic times of year. There’s shopping, holiday cards, invitations, and food preparation. Those are just the basics; there is so much more involved that going in to detail would be far more in depth than one blog entry would allow. This could be considered part of the fun though, after all, how gratifying is it to see the shining faces of your friends and family as they enjoy the perfect dinner you’ve worked so hard to prepare. I would like to take a little bit of time to give you a few ideas that might make things easier or maybe just give you some new and innovative dinner ideas. Mostly I will discuss entrees from the series Gordon Ramsay: Cookalong Live.
If you have not heard of Gordon Ramsay let me take a minute to introduce him. Gordon Ramsay is a world renowned chef, television personality and restaurateur. Most likely you will recognize him from the television series Hell’s Kitchen. Ramsay is one of only three chefs in the UK to maintain three Michelin Stars at one time for his restaurant. In 2006 he won the Catey award for Independent Restaurateur of the Year. He is only the third person ever to have won three Catey awards as it is the biggest award of the UK hospitality industry. In September of 2006 he was named the most influential person in the UK hospitality industry. Gordon Ramsay’s restaurant, Restaurant Gordon Ramsay, was voted London’s top restaurant in "Harden’s" for eight years. Obviously, this is a man who knows a little something about food.
Now that you have an idea of who I’m talking about, let’s get to the fun part; the food. In Fox’s one hour special, Gordon Ramsay's Cookalong Live, he shows you how to cook a three-course meal in one hour, on live TV. The show was absolutely amazing and although I was not able to follow along with Gordon, the meal looked absolutely fabulous. The starter course was Angel Hair Pasta with Shrimp, Chili and Tomatoes followed by the main course of Steak Diane with Sautéed Potatoes and Peas and ended with a quick Tiramisu. Viewers are provided with a shopping list so they have everything they need prior to the beginning of the show and at the end of the one hour you will have prepared the aforementioned delectable dishes. You can find the recipes and the shopping list at I’ll go through the equipment needed and the food items you’ll need, but since I’m not Gordon Ramsay it may be easier to follow the link for the actual preparation. Plus, it’s just plain fun to follow along.
The equipment that Gordon recommends having before you start these meals is as follows:
4 x bowls for starter
4 x plates each for main
4 x Martini Glasses
4 x sets of flatware for starter, main and dessert
Damp cloth for wiping down between courses
Dish cloth
Paper towels
Sharp knives - one large, one small
Extra spoons, forks and knives
Large serving spoons
Extra plates
Kettle (make sure you have a pot of boiling water ready for your pasta at the start of the show)
1 cutting board
2 medium mixing bowls
1 rolling pin
1 wooden spoon
Kitchen tongs
1 spatula
1 colander
1 strainer
1 garlic press
1 microplane/fine grater
Electric whisk or hand whisk
1 large saucepan and lid
2 medium saucepans and lids (or one but you'll need to wash up between courses)
1x large skillet pan
2 medium sauté pans (or one but you'll need to wash up between courses)
For the starter course you will need the following ingredients:
7 ounces angel hair pasta
1 red chili
2 large garlic cloves, peeled
Half a pound medium size raw, peeled shrimps
¼ cup white wine
1 large tomato, for example heirloom or beefsteak, or a few smaller tomatoes like Roma
Small handful fresh basil leaves
3 scallions
Salt and freshly ground black pepper
Olive oil
Extra virgin olive oil
For the main course you’ll need:
4 x small sirloin steaks, approx 7 ounces each
3 shallots, peeled
4 ounces crimini mushrooms, cleaned (if crimini unavailable use button mushrooms instead)
1 tablespoon salted butter
1 garlic clove, peeled
1 -2 tablespoons Worcestershire sauce, to taste
1 tablespoon Dijon mustard
1/3 cup brandy or cognac
1 cup heavy cream
Small handful of flat-leaf parsley
1 pound small waxy potatoes (like Yukon Gold or any small new potato) cut in half
3 small sprigs of rosemary
2 garlic cloves
1 tablespoon salted butter
2 cups peas, defrosted if using frozen
½ tablespoon salted butter
Salt and freshly ground black pepper
Olive oil
For the dessert you will need:
1 cup mascarpone
¼ cup powdered sugar
4 tablespoons Marsala, or sweet dessert wine such as vin santo
1 vanilla bean, or 1 teaspoon vanilla extract
¾ cup heavy cream
1 cup cold strong coffee
4 Italian ladyfingers, or savoiardi
Piece of chocolate, to grate as garnish
So there you have it. Everything you need for the perfect three course dinner to impress even the pickiest of guests. With the holiday season in full force and the influx of guests you are sure to have in and out of your home, show them what an amazing chef you really are. It’s the season of love, friendship, and joy, but in this case a little pride on your part and a tiny bit of jealousy from your guests might feel good too.
