A Pecan Cinnamon Rolls Recipe

Cinnamon rolls are what I would honestly call a “heartwarming”, homey recipe. I fondly remember the jump in my heart when I would wake up during the weekend and could smell my Grandma’s cinnamon rolls in the oven. They were sure to be sweet, just like her. It’s funny how the memories associated with certain foods can turn them into so much more than just a recipe.
I’ve cooked quite a few recipes during my time with KaTom Restaurant Supply; too many for me to count right now. I can still remember the process of taking pictures for my first blog, Scrumptious and EASY White Chocolate (Cranberry) Macadamia Nut Cookies. I could hardly keep the camera still enough to take a picture I was so nervous. The same went for my first cooking video, Spoil Your Mom with Chocolate Covered Strawberries. These experiences may have been a little scary at first but they have made me grow as an individual.
This is my last food video for KaTom Restaurant Supply and was something of a request from the wonderful ladies in the office. The thought of leaving this place behind scares me; simply missing everyone at KaTom has been in the forefront of my mind. Every single recipe I’ve made for KaTom is now going to be full of memories, some of which will be sweeter than any recipe I could ever make. I’ll forever love my KaTom family.
Take a moment to reminisce about the times we have spent together over the years at KaTom. I don’t have to stretch the truth when I say I’ll fondly be remembering all of you every time I bake these cinnamon rolls. This recipe, and all of my KaTom recipes, will forever be sunny memories held close to my heart.
Pecan Cinnamon Rolls
What You’ll Need for the Dough:- 1 ¼ cups milk
- ¼ cup butter
- 1 teaspoon salt
- ¼ cup sugar
- 1 egg
- 1 tablespoon active dry yeast
- 3.5 to 4 cups flour
- Hand mixer, like my KitchenAid 5 speed handmixer
What You’ll Need for the Filling:
- ¼ cup softened butter
- 1 cup packed brown sugar
- 1-1/4 cup chopped pecans
- 2 teaspoons cinnamon
What You’ll Need For the Glaze:
- 1 cup powdered sugar
- 1/3 cup heavy cream
- In a microwave, heat the milk, butter, sugar, and salt until it is about 120 degrees F
- Combine 2 cups of flour and the tablespoon of yeast in a large bowl
- Add the warm milk mixture and the egg to the bowl
- Beat for 3 minutes
- Add enough of the remaining flour to make a soft dough
- Cover a surface with flour
- Knead the dough for 3 to 5 minutes or until the dough is smooth and elastic
- Place the dough in a bowl and cover
- Let rest for 20 minutes in a warm place
- Flour a surface
- Roll the dough out into a rectangular shape, around 17 x 10
- Spread with ¼ cup softened butter
- Combine brown sugar, cinnamon, scraped vanilla bean paste, and chopped pecans
- Spread the brown sugar mixture evenly over the dough
- Starting from the long end, roll the dough up
- Cut the roll into 15-21 slices
- Place the slices side down into greased 9 X 13 baking pan
- Cover and refrigerate overnight
- In the morning, remove lids and replace them loosely
- Let stand for 30 – 40 minutes or until soft to the touch
- Bake in a preheated 350 degree oven for 20-25 minutes
