Chinese wok range cooking offers exceptional heating, as the rounded bottom provides a large surface area for making contact with heat. Because the wok sits in a recess or on a raised ring, very little heat can escape around the vessel, providing efficient heating.

For cooking authentic stir fry dishes in woks, KaTom provides several types of commercial wok range in a variety of configurations with one to eight bowls. Some models of commercial wok range are constructed from stainless steel, many include water-cooled tops, and tempura-style 3-ring burner ranges are available. A larger Chinese wok range may include built-in drains and faucets.
