A commercial convection oven is equipped with a fan that circulates – or convects – hot air throughout the cabinet. That movement, as opposed to the static heat of a conventional oven, enables a restaurant convection oven to provide remarkably even heating and consistent results. That makes it a great tool in any kitchen, but particularly in those of chains where a single model can be used in every location and depended on to provide the same results each time. While the circulation provided by a commercial convection oven is great for a lot of reasons, it also has its drawbacks. The moving air can help provide great results in baking breads and other items made from dough because it can prevent burning from uneven heating. However, batters can be disturbed by the fan and may even be splattered around the inside of a convection oven, so be careful putting those items into your restaurant convection oven. To address that issue, many models now offer a two-speed fan, with one setting for more substantial foods like meats and another for delicate items like batters.
