African Curry Recipe

Curry with riceIngredients

  • 1 tbsp. olive oil
  • 4 cloves of garlic, minced
  • 1 yellow onion, chopped
  • 1 bay leaf
  • 2 tsp. curry powder
  • 1 can whole tomatoes, drained
  • 1/8 tsp. salt
  • 1/2 cup plain yogurt
  • 1/2 tsp. ground turmeric
  • 3-4 lb. whole chicken, deboned, skin removed, and cut into 1 inch pieces
  • 1 can coconut milk
  • 1 lemon, juiced

Ingredients for African Curry Powder

  • 1 tbsp. ground cumin
  • 1 tbsp. ground turmeric
  • 1 tbsp. ground coriander
  • 1-1/2 tsp. ground ginger
  • 1-1/2 tsp. ground allspice
  • 1/2 tsp. chili powder
  • 1/2 tsp. cayenne pepper

Directions

Marinade chicken for a few hours or overnight in yogurt and turmeric.

Heat olive oil in pan over medium heat. Add the minced garlic, chopped onion, and the bay leaf and cook until slightly browned.

Add the tomatoes, curry powder, and salt to the sauté pan. Cook for another five minutes.

Add the chicken to the pan and cook until the chicken is done, about 15-20 minutes. Turn the heat down to low and simmer. Over the next 10 minutes, gradually stir in the coconut milk. Before serving, mix the juice of one lemon into the dish. Eat poured over rice or served with sugar snap peas.
