With microprocessor time/temperature controls, BKI's ovens are designed to cook at low and high temperatures and programmable to automatically shift into a 'hold' mode after a cook cycle.
BKI's electric and gas pressure fryers utilize controlled low pressure to promote faster cooking at lower temperatures. The fryers' built-in cold zone collects breading "fall-off" to prolong the life of the shortening.
